Como muchas veces en la cocina sure\u00f1a francesa, y en especial medida en la cocina del suroeste, el pato y el ganso ocupan un lugar preferencial entre los ingredientes de tan suculenta cocina.<\/p>\n<p>Hoy les proponemos la receta de Papas a la Sarladesa (Sarladaise, gentilicio de Sarlat). Si no logran encontrar todos los ingredientes, hemos propuesto unas alternativas interesantes para poder cocinarlas.<\/p>\n<p><strong>Ingredientes (para 4 personas)<\/strong><\/p>\n<ul>\n<li>500 g de papas (preferentemente papas firmes)<\/li>\n<li>50 g de grasa de pato o chancho (o, en su defecto, aceite de oliva)<\/li>\n<li>1 diente de ajo<\/li>\n<li>2 cucharas soperas de perejil<\/li>\n<li>250 g de champi\u00f1ones (tipo Portobello)<\/li>\n<\/ul>\n<p><strong>Receta<\/strong><\/p>\n<ol>\n<li>Pela las papas y c\u00f3rtalas en finas rodajas<\/li>\n<li>L\u00e1valas y enju\u00e1galas con un trapo (es importante que las papas no est\u00e9n mojadas)<\/li>\n<li>Poner a calentar la grasa o aceite en una sart\u00e9n<\/li>\n<li>Cuando la grasa o aceite est\u00e9 caliente, echa las papas. Mece la sart\u00e9n sin mover las papas de tal forma que las papas se doren. Mant\u00e9nlas as\u00ed hasta que est\u00e9n bien doradas<\/li>\n<li>Rehoga las papas (deja que sigan dor\u00e1ndose en llama baja, tapadas) durante 2 a 3 minutos (no m\u00e1s, sino se convertir\u00e1 en pur\u00e9)<\/li>\n<li>Destapa y dale\u00a0delicadamente la vuelta a las papas con una esp\u00e1tula<\/li>\n<li>Deja que se doren sin tapar<\/li>\n<li>Agrega el ajo y el perejil finamente picados, los champi\u00f1ones picados en cubos que habr\u00e1s previamente dorado levemente (en aceite de oliva)<\/li>\n<li>Disfr\u00fatalo y sabor\u00e9alo.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<blockquote><p>Hemos traducido para ti una serie de recetas tradicionales de diferentes pa\u00edses.
